Gluten Free in Milan? It all started here.
At the time it was a bold and visionary idea: to create a gluten-free bakery in the heart of Milan, to become the go-to place for people with celiac disease and gluten intolerance.
Hi, I'm Daniele, the founder of GluFree Milan
Until 2010 I didn’t even know what gluten was. Then I fell in love with a girl with celiac disease, who later became my wife, and from that moment my perception of things changed completely. I could see that for her eating out and grocery shopping was always frustrating, often complicated, sometimes even dangerous. She had no choice when it came to quality products, no certainty or peace of mind to enjoy a good breakfast or a nice lunch out, no way to shop for quality artisan food. At the time I was working in the restaurant world in London, and for work I had been to New York where I had visited some wonderful bakeries — and that’s how the idea was born.
The idea of giving people with food intolerances the chance to make their eating habits normal, enjoyable, full of certainty and satisfaction. To create a place where you can have a good breakfast or lunch with friends or family without the problem or embarrassment of asking “what can I eat without gluten?”
To get there, though, two things were essential: absolute food safety, and product quality. To make GluFree the right place both for those with specific dietary needs and for those who can eat anything and want to discover new flavours.
I continuously experiment with new recipes, and I do it at home: in addition to my wife, two of our children also have celiac disease. So when I knead bread, take a croissant out of the oven, decorate a cake or fry arancini, I’m not just doing it for my customers — I’m doing it for my family.
I wanted to create the most inclusive bakery in Milan, perhaps in Italy. For the most beautiful and powerful reason in the world: love.

Gluten free is at the heart of our bakery philosophy. But the people who walk through our doors have different intolerances, or follow a controlled diet. That’s why we are very attentive to the lactose issue as well.
With us you’ll find croissants, arancini, cakes, bread, pizzas, sandwiches, focaccia, panzerotti and much more. All lactose-free.
